Down a side street from the Timios Stavros monastery in Omodos, a small room holds the village's traditional wine press, known locally as the linos of Charilaou. Vats, cauldrons and winemaking tools from Cyprus's wine-growing past surround it, but the centrepiece is a giant double wooden beam and screw, weighted with stone and worked by pulley, said to be 700 to 800 years old.
